How do you fix a batch that tastes bitter or sour?
Taste tells you which direction to move. Bitterness, a drying sensation at the back of the tongue, usually means over-extraction: the water pulled too much out of the grounds. Sourness, a sharp tang at the front and sides, usually means under-extraction: the water did not pull enough.
For bitterness, coarsen the grind slightly, lower the water temperature a few degrees, or shorten the contact time. For sourness, do the opposite: grind finer, raise the temperature, or extend the brew. Change one thing, brew again, and compare. Two or three rounds usually land on a drinkable cup.
A batch that is both sour and bitter at once is usually a sign of uneven extraction, often from a grinder producing a wide range of particle sizes. A burr grinder, even an inexpensive hand model, narrows that range and makes the adjustments above predictable instead of random.
Does freezing coffee beans work?
Freezing can preserve beans, with conditions. Whole beans, sealed in an airtight bag with as much air pressed out as possible, hold up well in a freezer for several weeks. The enemy is moisture and repeated temperature swings, so portion the beans before freezing rather than opening one bag again and again.
Grinding before freezing is a poor trade. Ground coffee has far more surface area exposed to air and moisture, and it stales quickly even at low temperatures. If beans come out of the freezer, let the sealed bag come to room temperature before opening it, so condensation forms on the outside of the bag rather than on the beans.
Build a repeatable morning routine
Consistency beats equipment. A short routine: weigh the beans, grind to the setting that worked last time, heat water to just off a boil for dark roasts or a little hotter for light roasts, and pour in stages. A cone brewer benefits from a brief bloom, roughly twice the coffee's weight in water, followed by a thirty-second pause before the main pour.
Keep a few notes: roast date, grind setting, coffee weight, water weight, and a one-word taste impression. After two weeks, the notes show which change actually helped. That record is more valuable than any single recipe, because it is calibrated to one grinder, one water supply, and one set of taste buds.
Water itself matters. Very hard water can mute flavors and scale a kettle, while distilled water extracts poorly and tastes flat. Filtered tap water, or bottled water with moderate mineral content, is a practical middle ground for most home setups.
Where beans and method meet
Origin and processing shape what a brewer is trying to preserve. Washed coffees tend to read clean and bright, natural process coffees tend to read fruitier and heavier, and the roast level decides how much of that survives. A light washed coffee brewed too coarse tastes thin and sour; the same coffee brewed finer tastes sweet and structured. A dark natural coffee brewed too fine tastes muddy and bitter; coarser, it tastes like cocoa and dried fruit.
